Mustard Greens & Tomato-Basil Salad with a Simple Vinaigrette & (Optional) Steamed Buns
By Renee S.
This salad comes together simply—with minimal effort and maximal nutrients. If you have an overabundance of summer veggies in your fridge, feel free to adjust the ingredients accordingly. The recipe I’m focusing on for this newsletter is the salad, though the steamed Chinese-style buns (bought from Trader Joes in the freezer aisle) paired with this chili crisp make a more substantial meal.
If you’re interested in making your own vegetarian buns, I’m suggesting this recipe via Woks of Life—a recipe blog that one of my Chinese-American friends highly regards and recommends to those interested in authentic Chinese cooking.
Recipe: Leafy Mustard Greens & Tomato-Basil Salad
Yields: 1-2 servings
Ingredients:
1-2 handfuls of mustard greens, rinsed and lightly torn
1 heirloom tomato, cut into slices or cubes
1 handful or pea tendrils (or other microgreens or shoots of choice)
1/4 cup fresh basil
1/2 avocado, sliced or cubed
salt & pepper to taste
For the vinaigrette:
3 tablespoons olive oil
1 tablespoon soy sauce
1 tablespoon balsamic vinaigrette
1 tablespoon white wine vinaigrette or lemon juice
pinch of salt & pepper
Directions:
Rinse and chop your veggies, then toss into a large bowl with your homemade vinaigrette.
Salad suggestions: Looking to make a heartier salad? Try adding a half cup of cooked farro or quinoa to your bowl, or top with zucchini & squash sautéed in olive oil and seasoned with salt & pepper.
Enjoy!
'Keep Growing Detroit’s Annual Farms & Gardens Tour
This upcoming weekend is Keep Growing Detroit’s (KGD) 25th annual farm & garden tours for biking, driving or walking. The evening will conclude at the KGD Farm with music, food trucks, popsicles, and a toast to 25 years of touring Detroit family, school, community and market gardens. Tickets are on a pay-what-you-can sliding scale of $15-$100 and include the tour + food ticket for the celebration at KGD Farm, 7-8pm. Tickets for only the celebration are available for $25.
To give a brief overview: Keep Growing Detroit’s (KGD) mission is to promote a food sovereign city where the majority of fruits and vegetables consumed by Detroiters are grown by residents within the city’s limits. They offer gardening classes and sell seasonal transplants at a subsidized price to Detroiters. KGD also operates a 1.38-acre urban farm and teaching facility located in Detroit’s historic Eastern Market District.
