Hummus, Leafy Greens & Radish on Toast

Spring is finally here, and though the weather hasn’t substantially warmed up, the sun has been making more of an appearance which is a start! This week, I’m sharing a light & bright recipe to reflect this subtle change of season. It’s super simple and involves no cooking whatsoever. This doesn’t necessarily require a recipe, but I’m sharing it as more of a suggestion than something to abide by. Quantity of ingredients is up to your discretion.
Prep tips: I’m using an olive tapenade hummus for my toast, but any sort of creamy spread will help keep the greens and veggies on top of your toast. A few other good options are tahini, red pepper tapenade, baba ganoush or cream cheese.
Ingredients:
hummus (or other choice of spread)
microgreens and/or fresh herbs (I’m using pea shoots and fresh dill)
leafy greens (I’m using arugula)
radish, thinly sliced
tinned fish (a good option for non-vegans)
squeeze of lemon or lime
pinch of salt & pepper
olive oil
Directions:
Step 1
In a small bowl, combine leafy greens, coarsely chopped microgreens and fresh herbs. Squeeze juice from a lemon or lime so the citrus coats the greens evenly, add pinch of salt & pepper.
To Serve
Slather a generous layer of hummus on toast, add lightly torn pieces of tinned fish (if using), top with your mix of citrusy greens and thinly shaved radish. Drizzle with olive oil to finish. Easy peasy.
Notes: Any combination of fresh greens, thinly sliced root vegetable (or even fruits) and fresh herbs will work great. A few other good toppers suggestions are pickled mustard seeds, red onion, sliced apple, a fruity chutney, harissa and yogurt, pickled veggies, etc. Add a jammy egg for extra protein.
