Our Weekly Rec: Scrambled Eggs & Scallion Pancakes with Chili Oil & Microgreens

Over the weekend, Annie & I made a trip out to 168 Asian Mart in Madison Heights to stock up on our Asian food pantry staples, cute ceramic wares and sake. Needless to say, all of my subsequent meals have been Asian-inspired, full of flavor and topped with our microgreens to add extra nutrients.
You can recreate this simple breakfast by pan frying a pre-made scallion pancake on the stove top, found in the frozen isle at 168 Asian Mart (or at most Asian markets).
To make 2-3 scrambled eggs: Crack and combine eggs with approx. 1 teaspoon of soy sauce, 1/2 teaspoon shaoxing wine, 1/2 teaspoon toasted sesame oil, a splash of rice vinegar, and salt & pepper, then scramble well with a fork. Add 1/2-1 tablespoon unsalted butter to pan and cook eggs on low-med heat, stirring frequently for soft scrambled eggs.
Serve scallion pancake and scrambled eggs on a plate, top with a small spoonful of chili crisp oil and a handful of Featherstone microgreens.
